Halloumi and Humus Toasted Sourdough Sandwich

- 1cm thick slices of Halloumi cheese
- ½ lemon
- 1 tbsp olive oil
- 4 slices sourdough bread
- humus
- 4 inches of cucumber cut into long wedges
- rocket leaves
- red pepper slices
Preparation
- Heat oil in large pan over high heat
- add halloumi cook for 2 minutes each side or until golden brown
- remove from pan squeeze with lemon juice
- toast sourdough and spread with humus
- garnish with cucumber, rocket, pepper and halloumi
- add black pepper as seasoning if desired
NOTE
You can always leave out the red-pepper, rocket or lemon if you wanted to it tastes just as good.
