Frijoles Negros

Soak two packages dried black beans or turtle beans overnight. Throw out water, rinse beans well.For the sofrio, puree 1 large Spanish Onion and two Green Bell Peppers. Cook this in Spanish Olive Oil in skillet until lightly brown then add 1 large or 2 small jars Diced Pimento.
Fill a big pot with filtered water, add beans, salt, sofrio and 1 cup Spanish Olive Oil.
Simmer slowly up to three hours till beans are tender. Add water if needed.
Serve over rice or as soup topped with Sour Cream or Queso Blanco.
