Simple Quiche

Ingredients

3 eggs
1 cup cream
2 tblspn flour (all purpose)
1 bunch Scallions chopped fine*
4oz Prociutto chopped fine
1/2 cup fresh Basil julliened
1 cup shredded swiss cheese
1 cup shredded Gruyere
salt + pepper

Preparation

Preheat oven to 350 In a bowl, whisk together eggs, cream, flour, salt and pepper until smooth.
In a greased 9' pie tin, coat bottom with swiss cheese then add scallions* and basil.
Pour in egg mixture and add prociutto. Cover evenly with cup of Gruyere and place in baking dish and place on oven rack. fill baking dish with enough water to come about half way up the side of the pie tin.
Push rack into oven and bake at 350 degrees for 45 to 55 minutes or until quiche is set firm and begins to brown. Not all ovens or altitudes are the same ;-)
The water bath method omits the need for a pie crust.
* Scallion (green onions) may be substituted with leeks if desired.
In actuality, you can add or take from this recipe and let your creativity guide you.
Serve with fresh seasonal fruit and a chilled Vouvray or Riesling or whatever tickles your fancy. Merci boucoup, Bon apetit
