Light Pineapple Coffee Cake

Ingredients

1 1/2 cups all-purpose flour -- unbleached
1/2 cup wheat germ
1/2 cup brown sugar
2 teaspoons baking powder
1/2 teaspoon cinnamon
1/2 teaspoon salt
1/2 teaspoon baking soda
1 8 oz can pineapple -- crushed undrained
4 egg whites
1/4 cup applesauce

Topping:

2 tablespoons granulated sugar
1/2 teaspoon cinnamon

Preparation

Preheat oven to 350 degrees.
Lightly grease and flour an 8x8-inch pan or spray with non-stick cooking spray.
Mix dry ingredients (reserve granulated sugar and 1/2 teaspoon cinnamon for topping) together.
Mix remaining ingredients together then stir into dry ingredients until just moistened.
Pour into pan and top with cinnamon-sugar mixture.
Bake 40 - 45 minutes.
